Southern Ribs - part 2

The wife really wanted to try these after I told her how good they were on Saturday evening. So off the store for some more.

This time, we're using Savor Spices Fine Swine & Bovine!!


Need to show love to the WSM. It hasn't participated a whole lot lately.

On we go.


I dialed her in at 250 on the dome and she held steady for the whole cook.

These were close to 3 lbs of cut meat total. I figured I would let it run for 3.5 hours and then check. Kinda like doing ribs.
Coming off.


No sauce, we like them naked. The smaller one's were a bit dry but still very good. Next time I'll using the Maverick and probe the meat.

My plate. Served with Mac & cheese with roasted Poblano's & red peppers!


Dinner was hit. My wife really liked these.

The Mac & Cheese recipe came from the new Weber book titled "Smoke". Sounds like someone I know here.  ;D
I'll post the recipe tonight when I get home.
