Title: picanha
Post by: scottv on March 22, 2015, 10:46:04 AM
has anyone tried to cook a picanha yet? I picked one up yesterday and debating whether to cook it like a tri-tip or longer like a chuck roast.  thanks! The butcher said either way is good

Never heard of it but it is from the cap of the rump. This link may give you some good tips! Don

I've decided to treat it like a tri-tip cook. If it comes out good I'll probably cut it into steaks and grill it like the Brazilian's do. Pictures to come later

Cut it up and made some tacos. Cooked it like a tri-tip and it came out almost perfect. It definitely would have benefited from a quick seer first, but other than that it was great. I never had a cut of beef more tender it actually did melt in your mouth and I would highly recommend trying to find it

Nice cook, I will have to ask about that cut.  Never heard of it, but seems like it is worth the find.

that taco looks really good!!!! that is always the house special when going to a Brazilian churascaria and man you made it look pretty good.  im pretty sure that is a specialized butcher i guarantee walmart, costco, sams and any other big box store wouldn't carry that.  consider yourself pretty lucky.  btw, just curious how much was that cut per lb?

I've used that cut of meat quite often, yet. From grilling, to BBQing and hot smoking to pastrami - that all works pretty well!

I like your version to put it into tacos!

9.99 a pound for a prime cut. I got from central market in Texas. It does look like what the albertsons supermarket calls tri-tip that they occasionally have. I will have to try it from there next time. Especially since its half the price and not tri-tip

Im in mineral wells and got it from the central market in ft. Worth. I occasionally see tri-tip at albertsons in Weatherford. But it looks more like this and not tri-tip. The butchers at albertsons said they will get it if you call ahead

im in south fort worth burleson area.  im curious what did the person at albertson's call the cut of meat?  the rump cap? tri tip? picanha? if i could score that cut for a cheaper price boy id get that every weekend! i might just ask the butcher at albertsons's close to me to get a tri tip and see what i get.  i wonder if they have these cuts in usda choice?
