So I figured I'd post this entire cook and see if these ribs are worth the extra cash. I'll be cooking one rack today and one tomorrow morning to bring into work.
Sunday night, rubbed with Kosher salt and wrapped for overnight

Both racks just rubbed with Meathead Memphis Dust

I'll be using Stubbs Charcoal and two 4oz chunks of Peach Wood from Fruita

Here we are at exactly two hours, un-sauced. They are pretty much done. I'll sauce and put back on for 5 minutes...

First off, WOW, what an outstanding pork flavor with the Berkshire ribs. I don't really know how to even describe the difference. I'll definitely buy them again on certain occasions!

I don't like fall off the bone ribs, these were done in exactly 2 hours, they have a nice bite / pull from the bone...

The Fruita peach wood added a nice sweetness to it. I'd be interested in adding a different chunk of wood to pair with the peach

Kona, in your opinion was the cost of Berkshire versus what you can get a boxed store, worth the extra money?

Maybe once in a blue moon but not all the time, a little too expensive. I've already made ribs from the store that friends have dubbed the best ribs they've ever had. Granted they were good but $64 with shipping for two racks is a bit steep

Thanks, just saved me from ordering some. They looked awesome but most of us can do great things with just plain old box store ribs. ;)

Kona, Mike, I'm with you guys.
Now, I'm not naive enough to think that my ribs are as good as either of yours, Sparky's, or even Smochie's, but I think that they're pretty darn good. And my friends and family all think that they're better than any they've had in any restaurant.
For now, I'm going sit back and hope that Publix puts their St. Louis on the $1.99 lb. sale again for Labor day.
