We loaded up before the storm hit and I scored on two big Farmer John Picnics for .99 cents a lb. It was just too darn cold and windy and rainy to fire up the PBC, so to my horror Wendy says "Can I do it in the crockpot". I cut some big hunks off of it and she went for it.
She used Lawreys Taco Mix and Enchilada Mix to season the meat and she let it ride for about 6 hours

When tender enough to pull/shred, she drained out the juice and shredded then into a hot skillet

Old Smoke was given chop chop duty and I must say I did a purdy good job of it ;) At that same time, Wendy was frying up the taco shells

Three is my limit. A nice "non Texas Pete" hot sauce would go great with them. I'm sure Hub would agree.

Hey,we did the same exact thing,only I had our 2 cut into 4-5 pieces and made half into spicy sausage and other half making a buckboard bacon,that was a killer deal,gotta love Staters meat sales.
Glad to hear you are surviving this terrible storm.Last I checked its been 1/10th of an inch of rain ::) ;D

I didn't chain up, figuring if I didn't we might get blasted.........We did have a good covering yesterday morning but it barely lasted till noon-time ;D
