Well, I tried the method Dee posted about dropping an unpeeled avocado into a boiling pot of water for exactly ten seconds and moving it to a tub of ice water. I did that and served the avocado with a meal of leftovers.

I had four nice slices of ribeye steak leftover from dinner the other night. I chopped them up and added them to a pan of thinly sliced onions that I was sweating down.

Added some of my homemade taco seasoning (not too spicy, and not much salt). Plated with a couple of small soft taco shells, some shredded four cheese Mexican blend, some chunky salsa and the avocado, chunked up in the shell.

Came out really good, if I do say so myself. The avocado was very tasty with the rest of the meal.
The avocado after two hours still looked totally fresh. I will try this again. It may help make my guacamole look fresher longer, I hope.

As you mature in age you may find that you will start to share more meals with your significant other. If you buy a big enough steak, (which I often do) you can count on having a second meal from said leftovers. However, having said that, if my son and daughter-in-law and grandson are here for dinner, there could and I stress could be leftovers at the end of the meal. They will not be there by morning!
There is never, I repeat never any leftover bacon.

Thank you Doc. In addition to learning a lot about cooking, we learn a lot about word smithing.
