Title: PTG Cornish Game Hens

So now it is time to put the new PID I installed in the PTG to the test ;)

Started with a couple hens...

Now on a side note the vacuum tumbler I just bought is a cheap one that uses a hand operated pump for creating vacuum in the canister. So I made up a little adapter using parts I found in the garage to make an adapter for my Foodsaver accessory port to use. Works like a charm...

So back to the cook. Add the hens to the vacuum canister....

Add 1 cup Wishbone Vinaigrette, 1 cup water, and 2 teaspoons of M-3...

20 minute tumble...

Then a thorough rinse and pat dry...

Then some oil on the skin, smoked salt and Rosemary...

PTG preheated to 350F with Cherry pellets...

And on we go...

After 50 minutes they reached 145F IT. I then cranked up the PID to 400F for the finish until the IT was 160F...

Plated with Chicken Alfredo Pasta with Shrimp...

The PID worked flawlessly! I adjusted the timing to create some higher temp swings for more cherry smoke. The hens were great. This little cooker is gonna be great for camping ;)

1) Awesome conversion on the foodsaver suck-o-matick, I want you on my Zombie apacolips team :)

2) another killer auberins conversion to a pellet pooper.

3) fantastic looking mini-chickens, now if they could just makem boneless :D :D

Nice job on the PID mod.  How does it do on low and slow?

Art I took it down to 200F and it held there with some swings. I am going to be using this as mainly a camping grill so I wanted higher temp control and I got it.

The 3 speed controller does not work with a inverter as you know and I want this for camping and it will need to work on an inverter. So for less than the cost of a Traeger digital thermostat I could build a PID. Surprisingly the inside is deep enough to fit the PID. I thought I would have to use the external case like I did with the junior.

Them birdies are pretty! Cherry wood gives such a beautiful mahogany color to poultry.
