A pot of comforting chicken vegetable soup with some toasted roasted garlic bread really hits the spot on cold nights. Cooked the chicken thighs for 15 minutes -> added the veggies -> cooked an additional 10 minutes -> Quick Released the soup and enjoyed ...

I used 3 chicken thighs Pam. They were still partially frozen and I removed the skin before cooking them. Added another 2 cups of water to the 1 cup I used to cook the chicken. Stewed tomatoes, mushrooms, potatoes, red onion, green pepper, carrots, celery, and frozen peas. Any and all vegetables on hand works fine. 3 TBSP Chicken bouillons, crushed garlic, and black pepper to taste.

Looking very good..... Timely too. Wife has been sick for 4 1/2 days now and I think she "shared" a little too much as I'm starting to show signs of "the sick". Chicken and vegetables are like the universal cure, repeat as necessary....
