Title: Babyback Ribs on the Pit Barrel Cooker

With all the cookers I have I have been ignoring the PBC for quite a long time.  I decided today I would do a couple rack of
Babyback ribs and do them on the PBC.  Both racks were seasoned with Meat Church BBQ’s The Gospel and put in the PBC
once the coals were ready.

At the 2 hour mark I added a large sweet potato and 2 medium size bakers to the PBC.

After 3.5 hours I pulled the ribs and sauced them with Sweet Baby Ray’s Hickory and Brown Sugar. I will let them set up for
about 30 minutes and call them done.

My plate! I ended up putting the potatoes in the oven at 450 for about 20 minutes to finish them.

Ribs were tender and juicy with a nice light smoke profile.  I really do need to use my PBC more often.

Very nice ribs Mike. I think with all the chickens and pork butts etc cooked on here, that ribs are the best cook. They are something special when they turn out right.

Fantastic cook!  My wife asked me"what will this cooker do differently" when I got my PBC a year ago May, she really isn't BBQ like myself, but when I say I'm doing ribs her reply is " Ummm you are using the barrel right?"  As I have like 5 cookers now...my go to cooker for ribs!

I almost always buy spare/st. Louis ribs.

You have me thinking baby backs for my next rib cook.
