Title: Sunday Babyback Ribs on the Weber Kettle

Today’s dinner is going to be babyback ribs. This is actually 1 rack of ribs that I got from Zaycon foods (https://www.zayconfresh.com/products/pork/pork-loin-extra-meaty-back-ribs) that I cut in half.  I dry
brined them with kosher salt for about 3 hours then seasoned them with Meat Church BBQ’s The Gospel and Honey Hog.

I am using the Slow n Sear with the DnG and burning KBB. I am also testing some Mojobricks (http://www.atbbq.com/nsearch/?q=mojo+bricks) that I picked up a few weeks ago
from All Things BBQ.  I am using 2 Mapple (combination of maple and apple) and 2 Red Cherry.

2.5 hours in and they are ready to wrap.  I have kept my kettle temp between 230 and 250. Quite windy here today and my kettle
lid leaks real bad. I am using medium binder clips but it still leaks. I ordered a Weber Kettle Gasket kit from BBQ Gaskets  (http://bbqgaskets.com/weber-kettle-gasket-kit.html)and it should
be this week. I will do a full review after I receive them and test them out.

Out of the foil after 2 hours and sauced with Code 3 Spices Patriot Sauce (http://www.code3spices.com/patriot-sauce-original/).  I am going to let the sauce set for about 30 minutes.

Ribs are done and are resting for about 15 minutes before serving.

Served with some air fried potato wedges, homemade coleslaw and Bush’s Southern Pit BBQ beans.

Ribs were awesome. I thought they were overdone a bit but I was wrong.  Probably the best babybacks I have done out of this batch
from Zaycon foods. The Mojobricks added a nice light smoky flavor and I was actually amazed that when I pulled the ribs to wrap that
they had not all burnt up since they are basically compressed hardwood. They are a bit pricey so I am not sure if I will continue to use
them or stick with chunks. They do seem to put out a cleaner smoke than chunks. Overall a great day for cooking outside!

Mike your photography skills are so good you could make a chunk of sidewalk look like good eating.  :D

That said, that meal and those ribs looks stupendous!  :thumbup: :thumbup: :thumbup:

I was looking up Zaycon.  What's their deal?  You place and order and then you have to meet them someplace within a 30 minute window to pick up your product?

What happens is when you place your order it won't be delivered for at least a month or two. They have appointed locations in the area you live and they will email you and text you a couple days in advance of them being there to remind you. The day of delivery they are normally at the set location for a couple hours. Didn't know about the 30 minute pick up. I will be picking up 8 chuck roasts this coming Friday. They do have some good deals. So far I have bought the breasts, St Louis ribs, these loin back ribs, pork tenderloin and now the chuck roasts. I normally will wait until about a week or two before the deliver in my area as they normally will mark down the items coming especially if they have an over abundance. How hard is the DnG to clean after cooking ribs over it? It's on my wish list.

Even though Weber is sending me a new lid still looking forward to your review of the gasket. Hope that solves your leak problem.

DnG is real easy to clean. I just scrape off the grease, rinse it out then wash it with soap. With mine it will never look new as the stainless does scratch, but doesn't affect the product.

Now as far as the gasket review. I was curious about the measurements on my lid so I took them and they were a long way off from what they should have been. I bought this Kettle the last part of 2014 and I didn't think it was covered by warranty. I was WRONG, it is covered and Weber will be sending me a new lid. I should get it in about a week they said. You can't beat that for customer service! I am probably going to keep the gasket material when it arrives and use it for something else.

Zaycon is great stuff. I've order pork tenderloin, chicken breasts, and bacon. All of it excellent. You do really need a vac sealer for most of the items.
