Hi everyone, I am a retired Hospital administrator that stumbled on this forum the other day while I was trying to learn about pellet grills. I recently bought a pellet grill and look forward to the expertise on this Board to help me create some great food. In the past I have used by Weber gas grill and a Masterbuilt electric smoker with a cold smoke attachment. I haven't picked up my Rec Tec Mini from At The Border Storage yet but expect to within the next week or so and look forward to trying it out. In preparation I have been going over the posts here and have been enlightened quite a bit and look forward to putting all this new found knowledge to use.

Don't get too much anxiety over the newness of pellet cooking. It's really very forgiving. As with any cooking let internal temperature be your guide to the doneness which you prefer. And anything your home oven can do, your pellet grill can do as well or better with a kiss of smoke. The lower your grill temp the more smoke and higher temp less smoke. Enjoy!

It has also become my favorite social site, as there are many friendly & sociable people here. What kind of Pellet cooker did you get?? By the way, we all LOVE to see the pictures and results of the cooking (I don't always have time &/or energy after the cook to post the pictures, but it's a nice addition to the post when I do. Looking forward to following your food adventures here on the forum.
Do you cook outdoors year around, or only during the 2 or 3 warmer months in Canada ;) (OK, you'll have to forgive me for that smart a** remark, I spent my entire life on the border of North Dakota & Canada (& there are many things about it I miss). My friends from around the country always said they'd come to visit me up there in the summer, as long as it landed on a weekend. ::) :P
