Title: Question for the low carb members

Got to thinking about what can I eat that's low carb and it hit me to cut spaghetti squash noodles very fine like rice .

Pan fry in butter just till crisp (few seconds) then use as you would rice in a dish.

Anyone got ideas about this?   Truly trying to find new things to eat

Tommy:  I have cooked the squash in a pressure cooker for about 8 minutes.  Then scoop out the spaghetti and cut if you want.  Then stir fry in a pan with some chicken stock and butter or olive oil.  I also then mix in some tomato sauce like yours, and even some sausage and it makes a good dish.  Still pretty low in carbs.

Was wanting to do a paella type meal if I can and try to keep the carbs down

Just wondering if anyone had tried this?

I love rice and the texture just thinking outside the Uncle Ben's box ;)  :)

Last week we took spaghetti squash cooked it in the oven for a while then made spagetti out of it then fried it in bacon grease and topped with sauce. Oh man it was good.

Tommy Google cauliflower rice. I'm sure you'll find many recipes.
Can't handle the flavor  :P :P :P  Ive tried but cauliflower taste bad to me, kind has a taste like an old house smells ??? ??? ??? ???

LOL... I  already KNEW not to even suggest it!  :D 


I'll be interested in seeing how the Spaghetti squash works out, or even perhaps some finely grated zucchini.

Squash is on the list  for dinner tonight!  Ill save some and chop it up fine then fry in butter to crisp then try it in a dish

I know this is an older post but we use a spiralizer (https://www.amazon.com/Blade-Spiralizer-Vegetable-Spaghetti-Vegetables/dp/B00KOWGZJE/ref=sr_1_4?s=kitchen&ie=UTF8&qid=1496774711&sr=1-4&keywords=Spiralizer (https://www.amazon.com/Blade-Spiralizer-Vegetable-Spaghetti-Vegetables/dp/B00KOWGZJE/ref=sr_1_4?s=kitchen&ie=UTF8&qid=1496774711&sr=1-4&keywords=Spiralizer)) to make noodles out of zucchini, then just cook them in a pan until they get tender.

Yes sir, so far all is well eating veggies (thought I'd never say that)  ;)

But since starting this eating plan veggies are looking better :D :D :D ???

When I want spaghetti type dish I don't bother cooking the zucchini. I slice it, toss it warm olive oil spiked with garlic, red pepper flakes and anchovies.

I also am trying to limit my carbs and have lost about 25 pounds without excessive dieting.  In addition to the spiralized zucchini, I have made collard greens in my pressure cooking cooking it for about 20 minutes.  You can always add some  marinara sauce to kick up the flavor.  I want to ask everyone to post their ideas for more tasty recipes.

Tommy, Google spiralized zucchini noodle and shrimp recipes.  We bought a spiralizer and have been using zucchini noodles in several dishes.  Shrimp and zucchini noodles are especially good.  You can use the spiraluzed for butternut squash, as well as other veggies.  Very versatile.

EDIT:  I didn't read the entire thread before posting.  I see that spiralized zucchini noodles has been covered.

Cauliflower is a blank flavor canvas.
I prefer not to get full on fillers so I stick to protein and fat. But I have made faux risotto and faux mash from cauliflower. You need to season it heavily otherwise, on its own, cauliflower tastes like a used mop. (NoI haven't tasted a used mop HAHAHAHA)

For me, veggies are just fat transporters. I'll mash a little cauliflower and load it with kerrygold butter and some real Parmesan cheese. Oh it tastes really really really good.

@TMB How do you cook your cauliflower?
If you boil, use some chicken stock instead of just plain water.

Also consider roasting, tossed with olive oil and salt, till browned and crispy.completely difft flavor from boiled -- it is delicious that way and I agree with you about taste of boiled or steamed cauliflower

I never tried that but it might work. I think you want high heat roasting for browning, so maybe try first in oven, just break the head apart coat with oil, season however you like and spread on baking pan, maybe at 425. Just watch for browning till your preferred doneness. I'm sure if you google you can find recipes. It's the only way I eat it now. U can also mix with cheese And other things then mash if you like. Also good to roast with garlic and onions
