Title: PORK PRIME RIB

Hey guys, I thought I shared these with you. It's a pork prime rib that I marinated with some olive oil, rosemary, garlic, salt and pepper. Cooked on my weber performer.

It was cooked over indirect fire at 225F with some applewood chips, added some raspberry-chipotle mermelade 20 mins before reaching 160F.

You got some beautiful color on that pork. The USDA lowered their guidelines for pork to 145 degrees. Which is what I cook mine too. Curious if the Mexican government has an opinion on that topic.

Either way I would love a couple of slices!

I try to cook to what the FDA says. I didnt know they lowered the min temp for pork, good to know, thanks!

I must admit that I never really considered that there was such a cut - it makes sense of course.  Regardless - that is absolutely FANTASTIC/INCREDIBLE/OUTSTANDING.

Going to have to try that .
