I need to get this written down so I remember what I did...... Susan (who has registered here but not posted yet) was coming over to help me slice and package the bacon that I smoked this weekend so this was lunch......
I had looked at a bunch of recipes, most called for fresh tomatoes but one called for canned tomatoes roasted with some brown sugar sprinkled on top..... so I did a mix..... one can of cento italian style tomatoes drained (liquid reserved for later) sprinkled with some brown sugar, a lb. of tomatoes halved, seeded , and about 1/2 container of grape tomatoes. the two types of fresh tomatoes had some salt, pepper and a drizzle of olive oil. This went into the MAK to roast at 375

missed a pic of the roasted tomatoes after they came out
meanwhile cooked a couple small sliced shallots and a couple cloves of garlic in 2 tablespoons of butter till softened. added the reserved tomato juice , the roasted tomatoes , thyme and about 1/2 can of water and simmered for about 2 hours
buzzed it with the stick blender & then added about 1/2 cup of half and half

while that was simmering I threw a few slices of the bacon that we were slicing into the MAK to use in some grilled cheese
yesterday I baked some oatmeal bread, sliced that up, added some slices of cheddar & havarti & bacon (a little more bacon went on after the pic was taken)

onto the griddle to grill.... after flipping once I added some grated cheddar to the griddle and flipped the sandwich onto it

I'd have that for Breakfast , Lunch or dinner. Looks super !!

OH MY!!! I just finished a rather plain, ordinary grilled cheese. I wish I had seen this post first.

kev man is still at school, last final was today so he won't be home for winter break til tomorrow night... I'll let him know you were trying to steal his dinner again :o
maybe i'll recruit him and we'll see him cook something while he's home
