Last couple of rib cooks have been disappointing, so flu or no flu, I am going all out.
Last night I coated the ribs in cracked black pepper, white onion and brown sugar and put in the fridge for an overnight ride

Used some Sweet Carolinas rub from Burnt Offerings (need all the help I can get) ;D

Rubbed both sides heavily after wiping off the brown sugar sludge and into the fridge for 4 more hours

Gonna get the Rec Tec ready. These are really big spares and the Rec Tec has the grill space to lay em down flat. You ready Rec Tec?

I think I read somewhere that the brown sugar and onion overnight is a Famous Dave's technique. Have been meaning to try it.
Never heard of the rub, but if it is sweet.....then I need it!

Yup, Famous Dave's technique..well worth the extra step. The rub is sweet and smokey. Burnt Sacrifice rubs are some of the best quality rubs I have come across.....http://www.burntsacrifice.com/about.php

The ribs stayed rubbed for 4 hours in the fridge. The Sweet Carolina rub from Burnt Offerings turned all sweet and gooey while in the fridge...nice.
On the Rec Tec for 2.5 hours at 275 bring spritzed every 1/2 hour with a mixture of Apple Juice/Imitation Butter/suger

Just got the ribs re-rubbed and juiced and into foil for the next hour

Before I post the pics...just wanna say........I finally had a good rib cook. I made a glaze from scratch that consisted of peach preserves,corn syrup,catsup and some store bought bbq sauce and it came out nice. The Rec Tec did just proper as well......
