Title: La Caja China Pork Shoulders..

Started with (2) 8.25lb + or - Picnic shoulders. Injected this real well with a pre made Mojo marinade. Coated lightly with some Adobo.

Into the box.

Flipped to skin side up after one hour, added 5 more lbs of charcoal to the top and let it ride for the next 2.5 hours.
Here they are ready to come out.

Your final money shot was interrupted by a cut finger, followed by some cursing and a band aid shortly thereafter .  Sorry :'(

It was very, very good though. Final IT was close to 155ish when I pulled them.

Nice cooker and pork butts. Nothin worse then cutting yourself, sends shivers up my spine just thinking about it.

Sam, I've seen the videos on these and my son in law likes them.  I was thinking about buying him one for his birthday later this year.  How do you like yours and what are the pros and cons as you see them?  Thanks, Dee

Hi Dee,

I bought this cooker for raising monies for some hunting and fishing non profit orgs that I belong too, family birthday's and my hunting club party.  Primarily pig roasts most of the time
However, I use this a lot more than now.
Pro's: It will cook anything you want from yard bird to leg of lamb. I do pork shoulders all the time in this cooker. I even did the Thanksgiving Turkey in it.

Cons: No smoke added flavor being the charcoal is on top.

I'm fine with that. I make a homemade MOJO and inject the carp of it. The crispy skin with an excellent moist product. I get great reviews from the family.
And that's all that matters to me.

If y'all are not familiar with this cooker and method.  Google it on the internet and go to their website.  Very interesting.  From what I understand this method of cooking was brought to Cuba by the Chinese when they were working there and was adopted by the locals and eventually made it's way to Miami.  It's still made there..  Some great videos on their website.  Dee

Turtle, Good question.  It maybe too air tight for it to get any oxygen to maintain combustion.  Or for us grunts: it won't get no air.  Dee

I have not tried this myself, but Perry claims it works.
