Title: Caye's Meat Loaf Recipe

Caye's Meatloaf Recipe

My wife and I decided to make one of her home made meat loafs in the smoker. So we decided to share this with you. I have been reviewing a number of very helpful threads on this forum about preparing and cooking meatloaf and this prepared us for the process that follows. The following are the ingredients:
 
• 3lbs 80 or 90 per cent ground beef
• 1lb. ground pork
• 2lb. ground chicken or turkey
• 1 very large sweet onion – and I mean big or 2 big ones
• 3 to 4 green bell pepper or poblanos
• 1 ½ cups of chopped celery
•  8 oz or more of your favorite BBQ sauce –  I make a home one and use the entire recipe
•  6-8 tablespoons Worcestershire sauce
• 4 tablespoons Kosher salt
• 8 tablespoons of Yellow Mustard
•   6 tablespoons of your favorite rub recipe within the meat mixture
•   2 Tablespoons of cayenne pepper
• 4 tablespoons black ground pepper
• 1 ½ cups bread crumbs
• 6 eggs
• Sprinkle your rub on the top of the loaf
1 can of tomato paste
 
Normally, my wife does not usually measure ingredients, so everything can be done to your taste. And, the mixing of the loaf is all done by hand.

Meat Loaf Stuffing

•   1 lb. shredded mozzarella
•   ½ lb. of provolone
•   1 lb. fresh spinach and one pound of frozen spinach thawed.

My wife likes to substitute oatmeal for bread crumbs, and I must admit that it gives it a nice texture.  I also like the idea of using ground beef, pork, and turkey - in my opinion the blend is texturally superior than using only beef.

I love my mother dearly, but her meatloaf was a bit mushy in the texture department, and I'd never tell her, but I prefer my wife's recipe

I can't get my wife to let me smoke meatloaf.  Her meatloaf recipe is one of those ones that I am neither allowed to touch or have an opinion on .  It is delicious though!  :D
