Title: With beef at $1.98/lb, jerky is on the agenda for this weekend

I like to purchase lean beef at less than $2/lb for beef jerky.

9 lbs, trimmed of all possible fat, and sliced 3/8 inch thick

How did you do the kale chips.  Guy at work was eating them.  Interesting.

Tossed with olive oil and salt, then baked at 400F until they look done - they were both crisp and chewy, the combination of was quite delightful

I love me some jerky.  O/T - every time I see/eat jerky I am reminded of Clint Eastwood spitting on the dog in Outlaw Josey Wales...

I went to Winco in Puyallup WA and the beef bottom round was 3.99/Lb. I got 4.5 pounds for the price you paid for 9 pounds. I got a new dehydrator last summer from cabelas I'm going to use with Liquid smoke. A guy at work brought me some razor clams so I'm obligated to get him some beef jerky :)

Even though we had a power outage that affected us for a good part of the day yesterday, we managed to get the beef jerky completed (although it did take until this morning for the final racks).  Because it was relatively cool outside (30's), I had the smoker on the edge of the garage door where the smoke could still vent, but the garage would not fill with smoke.

Continuing from where the first post started, the meat was removed from the bags and drained on paper towels

... and arranged on racks.  Because the marinade was relatively salty and sugary, much water was already removed from the meat before the smoking even started

9-10 pounds of meat fills all 5 racks of the Big Chief - each rack was liberally coated with coarse black pepper.
