I found a 3lb piece of brisket at the store Friday and thought I could cook it in the pellet grill this weekend,in spite of the called-for weather, rain possible T-storms. On Sat. night I injected it with about 2/3 C beef broth with a tsp onion powder and a tsp FS&B.
I then rubbed the brisket with FS&B and put in refrig. until this a.m. It was a fairly warm morning with a light mist of rain falling, so I thought I could pull this off, but then the tornado warnings started and things got bad.Tornados were sighted in several towns in our county. A town 60 mi. away got hit really bad, Washington,IL. In fact a sign saying Washington,IL was found in the town just south of us. That sign flew 50 miles to Streator,IL!
Well this had to be an oven brisket. I put about 3 T of liquid smoke on the fat top foiled and threw in oven until IT of 190F. I scraped the fat off and back in fridge until it firmed up, a couple hours. Sliced, doused in BBQ sauce, refoiled and cooked at 375 for 25 min. It was served with cheesy potato casserole, and a broccoli slaw. The brisket was pretty tasty and tender, under the circumstances it was a great meal. We hope the best for those affected by these storms.

Looks good Gene and glad your safe!!! The storms came through here about 5:40 and they blew the sirens a half dozen times. Luckily I don't think it was too bad here in Wapak & hope all are OK in the surrounding area. After all was clear we had salmon patties, leftover pasta and a salad. I'll trade you! Don

a brother of a guy I work with was right in the middle of the tornado. Nothing left of his house but he is safe. Glad you are safe.

Thank you everyone for your kind words concerning our safety. Fortunately we are fine and no major damage but many folks not too far from us have been devastated. We are waiting to see when we can pitch in and help. So much of life is taken for granted.
Glad you were kept safe and what a great way to adapt.

OldFashioned Cheesy Potato Casserole. Courtesy of 101Cooking
6 med. potatoes
2 C sour cream
2 C sharp cheddar, grated
6 green onions, chopped
1 tsp salt
1/2 tsp pepper
1) Put enough water in a large pot to cover potatoes and bring to boil.
2) Scrub the potatoes and poke each with a fork.
3) Add potatoes to boiling water, turn heat down to low-medium and cover
4) Cook until fork tender about 40 minutes.
5) Remove from water and place in refrigerator for a few hours to cool.
6) Peel potatoes
7) Shred potatoes, place in large bowl.
8) Clean and slice green onions.
9) To potatoes add the sour cream, cheddar cheese, S&P, and green onions.
10) Mix well, spray a large baking pan with Pam and add potato mixture.
11) Smooth top.
12) Preheat oven to 375F, bake 35-40 minutes.
