Post by: Las Vegan Cajun on January 29, 2014, 01:15:20 PM: As y'all can probably tell from my screen name that I live near Las Vegas (Henderson) but I'm orinally from The Big Easy area (Metairie for those that know the suburbs).

Outdoor cooking has always been a way of life for us, especially back in Louisiana. We're always grilling, roasting, smoking, frying, blackening, and boiling something in the great outdoors.

Looking forward to reading all the great information this forum provides.

Good old Natchitoches meat pies, man I haven't had one of those in a long time, probably the last time I was in Natchitoches which was back around 1979. Going to have to break out a good recipe for one soon.

Yeah, had to go from one 24 hour town to another, never did like hearing the words "Last Call". LOL!!!

Getting ready to grind up some pork and make some Andouille. If I could find nutria out here in the desert it would go great together in a gumbo.

Thanks, Idaho is one of the handful of states I haven't traveled to yet. Going to have to load up the 5th wheel and the Harley and head up that way some day and do some riding, in the summer of course.

Thanks, I have a few friends from Canada that come to Vegas quite often and we get together. Hopefully we'll meet up some day too in Sin City.

Thanks, one of the things I love about visiting So-Cal is all the craft beer brewery's down there. My two favorites so far are the Stone brewery and Karl Strauss brewery.

Thanks, loved visiting Alabama had great times on Dauphin Island and touring Bellingrath Gardens.

Thanks, I have some roots in Northern California, my Dad was stationed at Hamilton AFB back in the 50's and that is where two of my siblings and I was were born. Shortly after that Dad separated from active duty and returned home to New Orleans where we grew up. We are also 49er's fans after the Saints.

I like to cook on just about anything that is outdoors. Currently I have a Charbroil BEESR, Weber Smokey Joe, Lodge Habachi Grill, Char-Griller Patio Pro, two propane burners one single and one triple. Looking at a Weber Smokey Mountain as my next purchase.

Thanks, yes I believe this site is one of the best, I spent several hours reading it yesterday and didn't get as much done around the house as I should have. :D

Thanks, good old Germany, been there once would love to go back. Had a great time in Munich at the Hofbräuhaus, now there is a Hofbräuhaus here in Vegas to go to when I want to get my taste of Germany. I know it ain't the same as being in Munich but it keeps the appetite wet until I can get back there.
