So - tomorrow morning, at 9:30 a.m. EST I will be doing an interview on WTZQ. It is a local AM station. YOU can listen on-line if you like. Just go to www.wtzq.com and click on the Listen Live in the upper right of the page.
I am taking them chicken thighs cooked with 3 different rubs ( Chicken Savor, BBQ Savor, and Steak Savor which are versions of Mo-Rockin' Chicken, Fine Swine and Bovine and Way Out West ) and a rack of St. Louis style ribs made with BBQ Savor. Bacon with Bacon Savor - and....
1/2 of a pork loin that is injected with Steak Savor, then marinated in it. Then I sliced up an orange into very thin slices, placed those on top of it...and wrapped it all in bacon. Placed it in a snug fitting casserole - then into the pellet grill.....when it was finished - I took the approx. 1 cup of juices, and added about 2 cups of orange juice, the zest of an orange, 1 tbs butter, and about 2 shots of bourbon. Simmered until reduced to a "Karo Syrup" consistency. It looks like a caramel sauce, and smells/tastes like buttery bourbon oranges... ;D ;D ;D
When I warm it up at the radio stain tomorrow - I will take some pictures and post 'em. So ...before you all bust my chops for the unicorn cook..gimme a break...I cooked for 10 hours today, and at one point had 3 grills going at the same time. :D :D :D

I can verify that he had all those grills going today. The smells were fantastic. The food looked really good, too. Those people at the radio station are going to be blown away with all that food. I'm sure Tee will get invited back, as long as he brings lots of food.

Same here. The feed died about 7 minutes in. I was so enjoying hearing about Tim's nose powers while living in "Skunk Alley." :D

O.K. - You asked for it. Some of these will make for good garden scarecrow material..... :D :D :D
In this one - I am in the radio station's kitchen, cutting a pork loin. The loin is injected with W.O.W., then vacuum marinated in the same. Then, i put a few fresh rosemary leaves, and thin slices of orange on top - and wrapped it in bacon. Int the pellet grill and POOF! magic..... 8)

The finishing sauce is simple - but really a nice touch on the pork.
I took the approx. 1 cup of juices from the pork ( I cooked it in a glass casserole dish on the pellet grill )
And added 2 cups of orange juice, 1 Tbs butter, and 2 shots of bourbon. Simmered until it reduced and caramelized the sugars in the o.j. About the viscosity of Karo Syrup...
REALLY tasty - intense orange, and buttery bourbon. ;) ;D

Yes...they had a porch swing. But - it is in Appalachia...so I let the hound dog keep sleeping on the swing. ;D

No..I was kinda busy at the time.... :D :D :D I will ask them, and possibly - they can transfer the piece to an MP3 file...And I may be able to link/load it here.

Thanks Gene! It was merely one of those momentary epiphanies that we all get when you are shopping... I also served them ribs, chicken with 3 different rubs, the Super Pig bacon, the Firecracker Beans ( I backed off of the heat for them ;))
And....I am a figurehead :D- but, I can learn from ALL of you guys.... 8). When I get to cook - I usually make it enough that I can coast until the next time I am in town to visit my grills ;)

Thanks fellas! The loin was cooked more than I prefer...but, when you are feeding people that you don't know - you do not have the freedom of credibility to cook the way you like... ;D So, it was done to the old USDA temp. recommendation ;D
Ahron - this was a really neat station. In a big old rock house outside of town. Lots of pretty lights and buttons...but I did not push any of them ;) :D

I tried Safari, Photon, and Chrome on the iPad and no luck. The page never opens. Photon did not work even in Flash mode.
Android download the file after pressing the link.
I listened to the whole thing and great interview. Tim if I ever meet you in person I will make sure to apply several layers of deodorant before we talk :D
