Healthy crab bisque, full of rich flavor

We love rich creamy bisques, but the high calorie/fat amounts keep us away except on special occasions.  This is a crab soup, bisque-like that only contains 220 calories per 1 cup serving (what you see in the bowl below), and is so rich tasting and satisfying that a single serving each was all my wife and I needed (we usually significantly overdo the servings)

I've never made a bisque, so decided to try a crab version because we're home-bound due to road construction.  I've been interested in she-crab soup, and various versions of crab bisque, but did not have the ingredients to make any single recipe, so threw up my hands, read a bunch of them and came up with my own version or this savory rich, creamy seafood soup that ends up being about 220 calories per serving, with 50 of those from fat




Ingredients for about 10 servings (the calories for the ingredients and those from fat are given below)
  • 2 carrots - 50/0 calories (total/from fat)
  • 1/2 onion - 20/0
  • 1 clove garlic -5/0
  • 4 tbs butter - 408/408
  • 1/4 cup flour - 114/3
  • 3 cups milk - 270/0
  • 1 cup chicken stock - 15/5
  • 1 can heart healthy cream of mushroom soup - 150/50
  • 1/4 cup white wine - 50/0
  • 2 tbs Worchestershire - 10/0
  • Sale and pepper to taste
  • 4 cups lump crab meat - 1064/0
  • Sour cream and chive garnish (1-2 tbs sour cream per serving) - 45/3 per 2 tbs
Directions
  • Melt butter in a large pot and sprinkle in flour - keep stirring for about 3 minutes or until the light brown.
  • While the roux is developing, rough chop the carrots, onion, and garlic, then add to the pot and cook for an additional few minutes
  • Slowly whisk in the milk to prevent lumps forming
  • Add the can of cream of mushroom soup, Worchestershire, chicken broth, and wine and simmer for 10-20 minutes
  • Add about 1 cup of the lump crab and using a stick blender, blend until smooth and creamy, about 2-3 minutes.  If you don't have a stick blender, you can use a regular blender (heat resistant)
  • Add the rest of the lump crab to warm, then garnish and enjoy!

Printing this one for the wife, though I would probably change it to a multi-ingredient seafood bisque.
