A little Steelhead Salmon dinner

I made one of my favorite meals last night. Steelhead Salmon. Added a little garlic to the salmon

Salted and peppered

Started peeling a russet potato. Make a bunch of thin peels to wrap the salmon.

Overlap the potato slices on top of salmon

Place potato side down in hot buttered fry pan with a spatula. Then add potato to the top of salmon.

While salmon is frying cook some tomatoes and peppers in olive oil.

Add some sesame oil, cause everyone on this site loves sesame oil. LOL

When potatoes are crispy carefully turn over and crisp the other side.

Plate in middle and put veggies on each side and enjoy. Great dish for people who don't like salmon.

That looks incredible.  I've had potato encrusted fish before, but not with Steelhead trout or salmon. And I really like the addition of the sauteed tomato & peppers.  Two thumbs up!!!
