I wanted to do something different with chicken and I am still having fun trying different thing on my Weber. This cooker is so versatile. I decided to spatch a chicken (as well as I could).


Rubbed with some EVOL and GSP.


Setup for indirect heat


So tender the quarters came off




During the cook I added some smoke. This was one of the best birds I’ve had in a long time. Tender, juicy, and a touch of smoke.

Instead of an actual beer can, I use one of these:



You can actually put a can of beer down in the holder, but I've never needed one.

I've also used one like this:

 

It will not hold the can, but you can pour some beer down in the center if you want to, and you can pack your veggies around the bird's legs.
