Stuffed Bacon Wrapped Shrimp

I found some Alaskan Wild Shrimp on sale at the the store...



First I cut the package of bacon in half and coated them with Super Pig Bacon Rub...



Then I put 4 tablespoons of cream cheese, 1/4 cup imitation crab meat, 1/4 cup of white onion, and a 1/2 teaspoon of minced garlic into my mini food processor. I blended it until smooth...





I shelled and butterflied the shrimp. Then added a spoon full of cream cheese blend. Then topped with Avocado and more imitation crab meat...



Then wrapped with bacon...





Onto the Memphis at 275F for 30 minutes. Then i bumped it up to 300 for 30 minutes. Then 400F for 15 minutes...



After I pulled them from the grill...





Plated with salad and cheesy potato bits ;)

Yes they were. They were up on the second shelf(cooler) and the bacon & stuffing insulated the shrimp.

Yes they were. They were up on the second shelf(cooler) and the bacon & stuffing insulated the shrimp.

I imagine the bacon grease kept it moist too. Looks so good.
