Pulled pork and scrapple sandwich for lunch

Feb 05 2015

I saved some of the Asian pork I did yesterday for a couple of sandwiches. I had a little of my easy scrapple left and thought that would be good on a sandwich with the pork.

I fried two thin slices of the scrapple until very crisp, heated up the pork and toasted the bun. I placed the pork on the bun and topped with some sriracha mayo and the scrapple. That made a great sandwich for my lunch!

This scrapple was an easy recipe and just had ground pork and smoked sausage in it. It's for ones that don't like or won't eat organ meat. Don
