Swiss Rosti with Onion Garlic and Swiss Cheese in de Buyer pans

After spending 3 days amongst the Swiss in Wisconsin we brought some of their cuisine home. This is a traditional Swiss potato dish served with breakfast or dinner. So typical of the Swiss, simple yet extremely flavorful!

No eggs in there Pappy. The trick is after grating potatoes they go into a clean cotton dish cloth and then wring the moisture out. This allows everything to bind, and finally it's pressed into pan, and not touched, but occasionally shaked.
15 minutes on med. heat, then to finish under the broiler. Voila!
