Pesto Shrimp Skewers on a PG-500

Ingredients
12  frozen uncooked peeled and deveined medium shrimp, thawed
1 7 oz. container prepared pesto
½ tsp. red pepper flakes

Directions
1.   Preheat pit to 400° F
2.   Coat the shrimp with the pesto in a bowl (a baggie doesn't work as well)
3.   Sprinkle them with red pepper flakes (one side) (optional—skip if serving a Norwegian)
4.   Thread the shrimp onto skewers (two-pronged skewers eliminate spinning shrimp)
5.   Place the shrimp in the pit
6.   Cook until just opaque, about 4 to 5 minutes per side
7.   Serve immediately

About a dozen fairly large shrimp recently thawed.  Notice that they're translucent.


Pestoed.  (Sure, that's a word.)


Skewered.


Plated with brown rice and quinoa pilaf.


Easy peasy (no peas).

Food looks really good.  How do you like the pg500?  I like that you can smoke and sear with them.   Is it a pain to set the LHT and the HHT?

How do you like the pg500?

I love it.  It's the best pellet pit I've ever cooked on.  (Oh...It's the only pellet pit I've ever cooked on.)  I think I would have loved whatever pit I bought.

I like that you can smoke and sear with them.   

I quit searing on the flame zone.  We like charcoal better.  But the three other zones, each one somewhat cooler that the previous zone, are a blessing when trying to have all items hit the dinner table simultaneously.

Is it a pain to set the LHT and the HHT?

No.  Operationally (setting it) it's quite easy.  And the learning curve is not steep.  It gives me the opportunity to adjust the amount of smoke the pit produces.  I used the factory settings of LHt=10, HHt=100 for this cook 'cause I wanted quite a lot of smoke.  That setting sometimes makes too much smoke for me if it's a long cook.

The user settings are what moved me from Mac and Memphis to the Fast Eddy PG-500.  I think that the Traeger users can adjust their P settings and accomplish the same thing.

Love your comment about losing the pepper flakes if you're cooking for a Norwegian.  I'm married to one.  She thinks mustard and ketchup are both way too spicy  ::)
