I had a hankering for ribs. It usually is always with me, but I'm only half of this team. Anyway, the rhubarb plot is flourishing this Spring so I searched for new ways to use it. I searched for bbq sauce using it and surprisingly I found several. Now I thought how about with jalapenos? Found it. On ladlemethis.com. It's a South Carolina-type mustard based sauce and it is good. Got a great taste and some spunk but is not too hot. Give it a shot, you'll love it.
1 lb rhubarb, chopped
1 lg onion, chopped
3 cloves garlic, minced
2 whole jalapenos, diced with seeds
2 C cider vinegar
1 C white wine vinegar
6 sprigs fresh thyme
1 C ketchup
1 C dijon mustard
Combine rhubarb, onion, garlic, jalapenos, vinegars and thyme in a sauce pan and bring to boil. Turn heat to low and simmer 1 hr. Allow to cool then puree in blender or processor. Mix in ketchup and mustard. Enjoy!
Ribs were coated with Big Ron's Rub and refrigerated overnight. Placed on indirect set-up. When close to being done a generous coating of the rhubarb-jalapeno sauce was applied. I thought what have I done? Oh my God it looked like Tenda-Rub!!
But after awhile it started to look normal. Several beverages helped me cope!
A potato packet was added and when all was done was plated with a nice cole slaw. Turned out excellent. ...even mama gave it thumbs up!
