This is my first try at my new gadget .
This is my take on hawaiian huli huli chicken .(I brine the chicken in buttermilk instead of water salt and vinegar)
first the brine .
buttermilk ,paprika ,salt , cumin , garlic powder , cayenne pepper , coriander and onion powder .
it goes to the frigid over night .
next day i washed the chicken and rubbed it with the dry rub.
the dry rub is the same spices i put in the buttermilk .
on the spit in to the pizza oven for 1 hour .
the skin was crispy , the meat was with great flavours and very moist .
