Last month I ordered a dozen St Louis style ribs from Zaycon Foods. I picked them up last Thursday and so we decided on ribs for today. A little bit about the ribs. They are Smithfield/Farmland brand. They were supposed to come as individual racks. Unfortunately they came in packs of 3 racks each. I did receive a credit from Zaycon since it was their factories fault. No problem, we let them get half way unthawed for a couple of days then vacuum sealed them individually. They are all uniform in size as they all measured 16 inches long and 5.5 inches wide. Lots of great marbling throughout the ribs.
This rack was seasoned with Killer Hogs the BBQ Rub and let them sit out while I got the Slow N Sear ready. I got the fire going with a Weber starter cube and 6 pieces of Kingsford regular charcoal. Once they were ashed over I added a large chimney of briquettes. I used 4 chunks of Peach wood and filled the reservoir with hot water. I put the ribs on, adjusted the vents to cook at 230 and let them go. I wrapped them at the 3 hour mark and left them in foil for 2 hours. Once out of the foil I let them firm up on the grill for 20 minutes then gave them a light glaze of Killer Hogs BBQ sauce. The ribs were plated with some smoked macaroni and cheese and homemade coleslaw. We definitely like the taste of these ribs. If they get back into the Zaycon rotation I will probably buy another dozen.

Great looking ribs. I think the spares I get at Costco are Smithfield brand, and have always liked them. I like Zaycon a lot. Bacon, and chicken breasts are awesome. I have Chuck roasts on order. Will be anxious to see how they are.
