Pressure cooker turkey stock

It's getting time for slow cookers and pressure cookers with the cool weather coming on. We cooked a small turkey on the weekend. The wife wanted turkey noodle soup with the carcass. I seen Smoker Pete and Smokin Don used their pressure cooker recently to great results. It says that I could make stock in about 30 minutes with it. So here goes..............
Added turkey bones, carrots, onion, celery, herbs, etc. Set cooker on Chicken/meat setting for 30 minutes. It takes about 10 minutes to get up to temp and pressure then it starts the 30 minute countdown. I strained the broth and seasoned. It was great tasting broth. I know next time with raw chicken added it will be even better. Cooked carrots, celery and onion in the broth for a few minutes and then added cooked turkey pieces, peas and Udon noodles for 3 more minutes. Fresh hot pepper bread and this soup was heavenly. I can see me using this cooker a lot this winter. Thanks guys for your posts that reminded me that I had bought one of these.

Nice job! Pressure cookers make the best stock......and in minutes! I have been making pressure cooker stock with stovetop models for over twenty years,  and it still amazes me as to how good it is! Before that a friend who was a sous chef taught me how to make a great stock on the stove that took nearly 24 hours. Although it was great.....I can't find that time any longer! :D

I was right there with you..... Until the peas. Any of you brown the bones before making stock? I've read that increases flavor, but have never done it.

Pappy you can put them on a pan and throw them in an oven about 300F until they start browning. Try to save anything that comes out of them as well.

I usually brown beef bones. With poultry bones I never found enough difference in taste to bother doing it. Maybe it's because of the small bones and hardly any marrow.

The baked beef bones get a richer bolder taste but i think it helps poultry as well. Just not as dramatic.

If you have an Instant Pot you can brown the bones in the pot before adding the water and dialing in the pressure. It's worthwhile.
