Pressure Cooker Torta De Lengua

Started with a beef tongue from Vallarta...



Peppercorns, bay leaves, salt, garlic and two cups of water into the IP...



Left the skin on. Will remove after it's cooked...



50 minutes on high pressure cooking then I let the pressure drop on it's own...





I picked up some Napolito salad to have with it...



Some of the Torta toppings...



Ok so this is a Torta "San Fernando Style". Started with some Banillo bread...



Refried beans on one side and Avocado on the other as a base...



Lengua cut up in a bowl...



Mexican Mozzarella Cheese...



Next is the Lengua...



Then slice Tomato...



JalapeƱo and onions...



Cilantro and onion...



And finally lettuce...



Plated....





The Torta was amazing! Tongue done in a pressure cooker is so tender and delicious! The cactus salad was not great. Ended up tossing it out.

Helluva sandwich! The only problem is making sure you have enough left over to make another one (or maybe an omelet) for breakfast.

I have had tongue in a NY-style deli.  I liked it then.  I am sure I would like your version today.  I may have to look for tongue the next time I go to Restaurant Depot or the Chef's Store.

My mom made pressure cooked beef tongue a lot when I was young. We would just have two slices of white bread, mayo and S&P.  Very tasty sandwich, pun intended. I know dear old mom would not pay 23 bucks for tongue now a days. She pinched every penny she could. Nice job Mike.

I have had lengua and sesos (brains)....that is what I get when I drink too much and end up at a legit taco shop..........

I am telling you that tongue was so tender and tasty!

I gave my 8 year old daughter some and told her it was a new style tri-tip :P

She did not spit it out and said it wasn't bad but loved the pulled pork much more!

Man, I'll take ALL these guys's shares!   My only problem would be getting that huge sandwich into my mouth! 

I'll have to use that "special tri-tip" line on James-- just this weekend I got shot down (again!) trying to buy some lengua while we were grocery shopping.   Time for some covert ops.
