Fresh and Frozen Way out West

Did some fresh oysters with Way out west Trail dust and some frozen bacon wrapped Scallops with Corn and Rice-A-Roni my favorite.











So far, everthing I put Way out west on is a winner. Got two more jars coming :)

Me too John, shuck 'em and suck 'em is the way I roll. When I can find some good bay scallops I like to saute them in olive oil, white wine with capers, fresh basil and anchovie paste and serve over linguine.

Those oysters never would have made it into the pan with me there!
As I cracked the shell open and the wife was slurping the juices out, I ask her if she had any shooters when I wasn't lookin and she did not . She said if I would have gotten two dozen she would have. I'm just starting to like oysters :)

Key, my local fishmonger gets in fresh Apalachicola Oysters (best there is in my opinion) a couple of times a week. On a good weather weekend I will go up and get a 30lb box and invite a couple of friends over for a oyster shucking and beer fest. My wife will alway cook up a good pot of oyster stew comfort food. Occasionally it has only been the two of us and we eat oysters all weekend. Raw, grilled, fried and oyster stew.

Like I said , I am just starting to like oysters and have learned you need to eat them whole and not just bite it in half :) as then you get to see all the interior Green goodness ;) Can you believe I opened those with a butter knife, gonna order this CLAM KNIFE unless you have a better one in mind. 30 pounds is a whole bunch of oysters :)

Looks like  a good shucking knife. I would strongly suggest you go to a fishing store and get one of those kevlar fish cleaning gloves. Nothing worse than your knife slipping and puncturing your hand and getting blood on that tasty oyster.

Amazon sugggested a kevlar glove set for 8.99. that would definately be a good investment,thanks for the advice Twopockets  :)

Although I have a wire mesh glove I rarely use it for oysters or clams because it's so bulky (I do use it regularly with the mandolin because mine doesn't have a slide attachment)... those Kevlar gloves look much easier to wear. But remember... they say cut resistant not cut proof!
