I have a package of the Soileaus seasoning in the pantry.  Didn't realize they don't do that anymore.  Need a special occasion to break it out, I guess.

Nope..

I had lunch with them before they shut down.  Avery was in pretty poor health (decades old back injury), and the cold/damp winters here in Illinois about killed him.   They pulled up stakes and moved back to Baton Rouge, hoping they could start up processing/packaging again.  However, bills kept piling up, and they could never come up with the capital to reopen.

Really really nice folks, but a sad story.

I "might" have 3-4 packages of that chili mix in a drawer. :)

The package says it makes a half gallon but STC schooled me that it makes about 2 gallons if you respect your stomach lining :)

Chili looks good but I'd have to substitute a jalapeno for that pickle  :o

Now that would have been a good idea and made more sense :) I just wanted some color for the picture but did not waste the pickle :)
