I really like your garlic and herb cheese idea.  I've always used plain cream cheese.  It'll improve my next batch.

I will sometimes mix a favorite rub in my cream cheese that is stuff the ABT's with. Whatever you like - but I would caution again the highly salted ones...( But that is probably just my warped taste buds :D )
