After looking at Scallywag's post tonight, I almost didn't put this up... dang that looked good.
Well, this is a simple chicken parmesan sandwich. Started by pounding some chicken breasts fairly thin. Then, added some olive oil and Italian type seasonings to a zip lock bag. Added the chicken breasts and stashed them in the fridge for a few hours to let them get happy.
I tossed the chicken on the G2G Ice (still raining here and this is the only grill under a cover.) While they cooked, I prepped some buns (bought at a local Hispanic bakery - big & round, chewy on the outside and soft inside - great for the grill. I brushed them with some olive oil mixed with the Italian type seasonings. I planned to toast them on the grill, but I knew I was pushing my luck with this last small propane tank, so did them in the oven - came out just right - a little crispy on the outside / edges and still soft and chewy inside. Then sliced up a sweet onion - I love a raw onion on this sandwich.
Flipped the chicken and made a simple salad. Then started steaming some veg - again with the Italian seasonings.
Added some cheese to the chicken - mozzarella and parmesan. Put the chicken on the buns and added my marinara sauce. Pulled the veg and added butter to make a little sauce.
Actually all came together on time - a nice change of pace...
