Thank you everyone for your kind words concerning our safety. Fortunately we are fine and no major damage but many folks not too far from us have been devastated. We are waiting to see when we can pitch in and help. So much of life is taken for granted.

I wouldn't mind hearing more about that Cheesy Potato Casserole.

OldFashioned Cheesy Potato Casserole. Courtesy of 101Cooking
6 med. potatoes
2 C sour cream
2 C sharp cheddar, grated
6 green onions, chopped
1 tsp salt
1/2 tsp pepper
1) Put enough water in a large pot to cover potatoes and bring to boil.
2) Scrub the potatoes and poke each with a fork.
3) Add potatoes to boiling water, turn heat down to low-medium and cover
4) Cook until fork tender about 40 minutes.
5) Remove from water and place in refrigerator for a few hours to cool.
6) Peel potatoes
7) Shred potatoes, place in large bowl.
Clean and slice green onions.
9) To potatoes add the sour cream, cheddar cheese, S&P, and green onions.
10) Mix well, spray a large baking pan with Pam and add potato mixture.
11) Smooth top.
12) Preheat oven to 375F, bake 35-40 minutes.
