It might be a silly question but what is the purpose of the pressure cooker?  If everything is already cooked and you only had it in there for 4 min, why use it at all?

Jboo, to answer your question. Pressure cookers not only save time, which also saves fuel, but I can use mine like a traditional pan/pot to brown ingredients like onions, meat etc. The pressure cooking process also tenderizes and as in this dish, mingles the flavors in a matter of a few minutes. I could have done this in a dutch oven, I certainly have many times, and it comes out good, but I believe it was a weeknight when I made it, and time is what we don't have a lot of anymore!   ;D
