Small Pork Shoulder

Did up a small 8lbs. pork shoulder yesterday in the PBC. Needed some pulled pork for lunches. For some reason I forgot to take a picture of it all pulled but it pulled apart great with a nice bark. It took 10 hours in the PBC with temps holding around 230-250 depending how closed I kept the vent.

Getting the PBC ready


A couple of apple wood chunks for more smoke flavor  ;)


Getting close to being wrapped in tin foil



At 165 IT I foiled it with some beer


Back in the PBC till 195 F


After a two hour rest wrapped up and in the microwave to FTC


The bone pulled clean out

Those are the temps i wanted for this cook. I choke off the bottom vent with a fridge magnet to get the lower temps, low and slow. I always use my electric charcoal lighter or blow torch. Cant stand lighter fluid.

Thanks everyone. I found out a few years ago from a forum member of the bradley site to use Blackstrap molasses if you want good bark. And he was not wrong on that. Use that as your glue and add your rub and your good to go.  ;)
Low and slow is the key also.
