So when I made my first smoke(snack sticks) on the new design I found that I did not get very good smoke flow through the cabinet at lower temps due to the smoke generator being located just outside the cabinet and level with the cabinet. I had about half the smoke backing out the generator. Having the generator located outside the cabinet is ideal for cold smoking because of the extra heat the generator burner makes. Time for a new design
I moved the smoke generator to the next shelf below and built a smoke generator housing for the puck burner...
The hole for the puck drop now has the smoke feed pipe to the cabinet going through it...
The puck chute comes through the shelf from the bottom...
Those are my custom puck storage containers in the back...
And here is a picture of the housing. The smoke feed pipe slides up and down so the housing and generator can be move out to remove the spent pucks and cleaning. That is done through the smoke feed pipe hole in the top of the housing...
And I gave it a test this morning with a completely cold cabinet and got a good smoke rise out the roof pipe and no smoke backing out of the generator or leaks in the piping. This is what I wanted for cold smoking
