Sweet Corn / Bell Pepper

The sweetest spring corn really makes this dish, may not look like much but so good !

Take 1 red and 1 yellow or orange bell pepper, cut up into a food processor with a stick of COLD butter, salt / pepper.
Pulse to a not too fine consistency.

Put a large tablespoon on each ear, wrap in foil and grill to your liking. I was experimenting with my new GMG DB, and even thought this picture looks like there is very little bell pepper mixture on the corn, it was absolutely delicious !

Looks great!!! Besides meat fresh spring corn is my favorite! Wish I had some now but have to wait till about the end of June or July. Don

good lookin' corn

you gave me an idea about using a pan with the melted butter mix
with the corn sitting in it, turning the corn during the cook
braising indirect on my OldSmokey
with hickory chunks on lump oak ;)

Yes, that sounds like a good idea.

One additional thing I didn't mention is that there was a fair amount of liquid from the peppers after processing that I drained off.
