I'm still playing with the test smoker. Made some pulled chicken today. Started with some chicken thighs (bone in / skin on.) Let them swim in a pretty standard salt / brown sugar / water brine for a few hours. Then coated with some EVOO and Mo' Rockin' Chicken Rub. Found the Bradley Rack fit perfectly - nice. Set the smoker for 230* and added some water to the pan. Used pecan for the smoke this time. At about 2.5 hours the chicken was at 170 - 175. I let it cool a bit, then removed the skin and pulled the meat from the bones - very easy.
We were getting close to the time to leave for a softball game, so there wasn't much patience for pictures - I did get a few. No time to make a pretty plate, but the sandwich was excellent. I added just a little Sweet Baby Ray's honey bbq sauce to mine. Topped with coleslaw. Enough left in the fridge for a midnight snack!

Just had my midnight snack - pulled chicken, soft roll, a few drops of Sweet Baby Ray, and a scoop of coleslaw. No picture - it's midnight - the time of unicorns... ;) :D
But I do have to say, the chicken is even better cold and rested for several hours. The rub and the light pecan smoke were just right. I've never made pulled chicken before. I have had it in restaurants, but it was always so over smoked and over sauced that it was almost inedible. This was excellent. The chicken was moist and tender and the flavors just right. Makes me think of Eric Clapton - Slow Hand... This will be a regular at my house - need to order some more rub!
Chuck roast and pork loin waiting in the fridge for their turns in the smoker... Rocky wants to do a bonfire tomorrow tonight, maybe will try a smoked pizza?

Looks great, Doc!! I do chicken on the grill fairly often, but I haven't done any pulled chicken. If there is any chicken leftover, it gets cut up for chicken salad. Must remember pulled chicken for sammies.

The goodness of pulled chicken is really overlooked. There are times it's more enjoyable than pork when you mix it with your favorite BBQ sauce.
Try it on those Hawaiian Sweet Rolls...Huuuuummmmm Gooooood Sammich!

One of the best looking contest turn-in boxes I ever saw didn't have the usual parsley or other "grass". Instead, the cook had placed his chicken (thighs) on top of a bed of shredded chicken (breast meat) that had been heavily sauced to turn it a gorgeous red.

Very nice looking chicken David! I love pulled chicken and you are right....too much sauce can ruin a very good thing. Yours looks wonderful! :P

Chicken looks great David!!! I do a lot of pulled chicken and like my pulled pork I don't sauce it and it can be used for about anything, sandwiches, tacos stir fry etc. Any sauce can be added at the table. Don
