Title: TBE Cracklins

The last time I made these I followed the instructions posted by Ka Hona but I really didn’t want to get the house hot and that smell stays around for a couple of days. Then I realized that I have one of the best fryers around, TBE.

After boiling them for thirty minutes and letting cool I let them dry overnight in the fridge.

Racked in TBE. I just got my Q-MATZ from A-MAZE-N-PRODUCTS. I cut the mats to fit my smoker racks and this what was left over. Where have these mats been, they are great.

Next time cut the skin in larger strips.

Not bad for a 1st run. Some of them got away and were touching the sides, I call them Kimmy done.

Thanks. It needs a couple of tweaks for the next run. Keep a better eye on them, cut them longer strips and trim some of the fat closer.
