I asked in the store early in the morning if they had any salmon. Yes just arrived, she opened a box and all the filets were on ice.
She let me have a look and I picked this one

I did about a 45min smoke

I decided to use my Grill Grates

I over cooked the salmon, next time maybe a couple of minutes a side and off. It was very good and I will be going it again soon.

Salmons still good when cooked med just moister when med- med rare .

We've got a load of fresh Albacore Tuna headed our way tonight, I might have to test this out on some tuna loin!
