Title: lil Smokey "curried" chicken

Ok so it is not really curried dish, I just used curry powder on it.
I wanted to try something new with the WSM 14.5 aka lil smokey.
Had a 3/4 chicken already dry brined so I thought what the hell. I made a paste of coconut curry powder, peanut oil and lime juice. Rubbed it all over the chicken and refrigerate it for about 2 hours.

Fired up lil smokey using ozark oak lump charcoal. This has become my favorite fire source. Waiting for it to really get HOT!
I didn't use any temp gadgets but I'm sure I ran at about 350 degrees.

Placed the bird skin side down. Notice that I removed the water bowl completely. I do this on the WSM 22.5 AKA Big Worm but I did not know how this would go on lil smokey considering the short distance between the grate and the coals.

I gotta say, minus the skin getting stuck and ripping off, the bird came out perfectly. crispy skin, just a touch of smoke from the lump charcoal.

It does look like one tasty bird!  You can see how moist the meat is from its look in the picture.  That is hard to do.

Worked great. No prominent flavor, every thing just gelled.
That color was probably from tumeric.

Great looking chicken, nicely done.  ;)

I've been pondering the idea of doing chicken like that in my WSM 18.5, kind of like a PBC chicken in a WSM.

I've been pondering the idea of doing chicken like that in my WSM 18.5, kind of like a PBC chicken in a WSM.

I have done it in Big Worm with great results, should work just fine in the 18.5.
Just have to start it real blazing hot.
Here I was skeptical due to the short distance between the coals and the grate.

Looks mighty tasty!!  Any reason for starting skin side down?  I would have thought the bone side would have handled to initial heat well enough and you would still get nice crisp skin.

Skin side down gets the fat rendering process quickly which leads to crispy skin.
The bare flesh would probably dry out if I started it that side down.

Found it at central market while I was wondering around their spice section. I was looking for inspiration for a new rub when my eyes saw "coconut curry powder." I love curries in coconut milk and I thought this sounded interesting
Let's just say that I went back for more. I rubbed it on PBCed pork and it was a hit!!

Central Market is bigger and more affordable the Whole Wallet. They stock some very interesting foodie stuff.

My thoughts exactly. And it worked on ribs as well, that's a plus.
