On my initial PBC cook a couple of weeks ago, I had a couple of extra racks of ribs which I seasoned with the PBC All Purpose Rub and stuck them in the freezer. Today I thawed 'em out and hung them in the PBC for a few hours.
I did a couple of things differently on this cook. First, I cut the racks in half because these racks were so long that I burned the end rib or two last time. Second, I used the All Purpose rub this time instead of the Beef and Game rub. Glazed half with KC Masterpiece and left half dry.
Overall, these were more tender than the first cook (I left them on for an extra half hour this time), and they did not burn at the bottom. I prefer the Beef and Game rub over the All Purpose rub, but both were good. Cooker temp was pretty steady at about 260 degrees. Pics below.

Yep, loin back ribs from Costco. They come in a vacuum sealed bag, three racks in a bag. Impressive amount of meat on the bones...
