Title: Sous vide corn on the Cobb!!
Post by: 1Bigg_ER on January 16, 2015, 08:21:15 PM
I took a bite and thought I heard angels sing. I'll never do corn any other way...

Rubbed it with butter, anointed it with seasoned salt

Sealed, ready for a dive in 183 degrees hot tub for an hour.

I had a rough time keeping the corn under water.

Let's eat! Best corn ever, done right, no mushiness.

Corn looks great, I just might be convinced to pry myself away from my two favorite methods of doing corn on the cob.  One is roasted, still in the husk, in the BEESR with hickory chips and the other is in the pressure cooker with the husk lining the bottom and the corn on top.

That corn looks fantastic!!  I wish I had some to try the SV method.  There are so many types of food that respond well to SV.  Love it!!!

WOW! I just had some corn from Famous Dave's - my oldest daughter works there. It was nice but a bit "soggy." this looks fantastic. It will be one of my forst cooks when my ANOVA gets here.

No sogginess with SV, firm tender crunch texture.

Cajun:  How long do you cook in your pressure cooker?  I like corn so much, I have to do it in the ways mentioned.

Cajun:  How long do you cook in your pressure cooker?  I like corn so much, I have to do it in the ways mentioned.

Once the cooker gets up to pressure I turn off the heat and let it sit while the pressure bleeds of slowly by itself, turns out perfect every time.
