Title: Rib Cook - Change of Plans

Earlier this week I had planned to do a sous vide session with St Louis-cut ribs for today/Sat. Bigg beat me to it and his looked great. But after hearing the temp was to be a high of 42F, I thought it would be nice to get another cook on the PK Grill. So after having too much coffee this morning I decided to cook the ribs both ways!  A rack was massaged using Big Ron's Rub and cut in half. One half went into the hot tub at 156F set for 8 hours, the other 1/2 rack and trimmings went on the PK set for indirect, for probably a 2- 2- 1 cook. Grill is chugging along at a steady 223 -225F. Here's a few pics.

I think I dig that upper rack on your grill. Would that work on a Weber kettle?

.....at the 2 hr mark, the half-rack was foiled with brown sugar,  honey, butter and Frank's RedHot Sweet Chili. Temp was upped to 275F by simply sliding the vent over the ribs to 1/2 open.

Okay back from a great rib meal!
The first pic, is the sous vide cooked 1/2 rack dried before being put on grill. Next pic is after removing both from grill, sous vide cooked on left, PK cooked on right. 3rd pic is plated with PK cooked on right, sous vide cooked on left, served with melting greens and garlic-roasted potatoes.
The verdict: The sous vide were nearly perfect with a nice bite but yet super tender. Good flavor! The PK cooked were arguably some of the best ribs I've made. I love this grill. It's a rib machine! Keeps temps steady, can be adjusted simply, and is a charcoal miser. So hands down the grilled ribs were best but the hot tub ribs were no slouch and awful good when the snow flies! Which is tonight, aftet 42F and sunny all day, we are getting 3" of the white stuff tonight!

The PK Grill cook more rack is the length of the PK and it fits nice in a Traeger or GMG  ;) ;)    That rack you have is something new from them and it allows the charcoal to be refilled easily.

I have never done ribs on the PK, I am sure glad you did, now I want to give it a try  :)

Great experiment Gene and TFS!!! I would say the grilled ribs look best over the SV ones.

I will be giving the SV ribs a try but honestly I have the way I cook my ribs are so narrowed down with times and temps. I get my ribs just the way I like them every time. And they are always cooked on my Memphis. That I don't want to change :P

I got my ribs on the Traeger and WSM dialed in too but the SV method is something I want to give a try also.
