Title: Little Man Boston Butt

Set up Little Man with my WSM 18.5 Charcoal Ring.  I set up briquettes and wood chucks set up around the outside of the ring, counter-clockwise, from about 11 to 2.  Then light up 10-12 briquettes in a can.  When they were ready, placed them at about noon.

It took a long time for Little Man to get up to temp, but I started it anyway figuring I’d get some early smoke on the meat before it really started cooking.  (Going to check with Sparky on this, since I got the idea from him.)

10:30 – IT 56º/LM 125º
12:30 – IT 97º/LM 268º

2:30 – IT 151º/LM 245º

At about 3:30, I added more briquettes to complete the clock-face up to the noon position.

4:30 – IT 163º/LM 268º

From the time Little Man came up to temp, it moved back and forth between a low of 240º or so and a high of 275º.  At about 6:00, the temp started to steadily drop.

6:00 – IT 178º/LM 243º
6:20 – IT 178º/LM 230º

I looked and saw that my lit coals had completed the circle and made it back up to noon.  So, it was time to pull the butt off.

I wrapped it and put in my Camfaux to transport over to my parents.

At that point I got sidetracked, so I didn’t get it into the oven at my folk’s house until about 7:30 – IT 168º/Oven 350º, and then it stalled.

It finally hit 195º at about 8:30, which is actually the "normal" meal time at my parents' house, especially on weekends.  So I pulled it out and let it rest for 15 minutes or so while I finished up the sides.

All agreed it was worth the wait.

That is a perfect looking pork butt. I love the way you show the versatility of the Weber Kettle.

I agree it is worth the wait as well - but that is a fine time for dinner. It looks fantastic - nice cook!

The BB looks mighty juicy.  Do you cook your comp butts the same way?  How was your flavor profile?

The BB looks mighty juicy.  Do you cook your comp butts the same way?  How was your flavor profile?

My Son-in-Law does the butts for the Sultans, he came in 13th out 65 at our last contest.  Mine is not over powering.  I don't inject and I use the same rub that I use on ribs. Spritz qith AJ every now and then.
