Title: 12.5 lb Ham Shank
Post by: TentHunteR on January 31, 2015, 01:32:54 AM
The butcher had a decent price on fresh hams- $2.19/lb. (especially considering pork prices lately), so I picked up a 12 1/2 lb shank half.

I injected it to 30% (by weight) with my Brown Sugar Brine cure, then let it sit in the brine for nine days.  I used waded up newspapers shoved in on the side to help keep the brine up and covering the ham.

After patting it dry with paper towels, it sat on a rack under the range hood to draw air across it for a few hours to form the pellicle.

It's now back in the fridge overnight and will go on the MAK smoker in the morning.

Stay tuned...

I made two hams for New Year's Eve. and used the Brown Sugar brine recipe that Cliff has posted int the charcuterie section. Absolutely the best ham I have ever made.

How are you gonna glaze it Cliff?

I can attest to that!  It was the tastiest ham I have ever eaten.

Cliff, you will need to plan ahead to make sure you have some of that ham at your Ohio Gathering.  It will be a hit!

Cliff, I am keeping a watch on this.  Wanted to do this for Thanksgiving and then for Christmas the for New Years and never got it done as I was way to busy.  Now my sights are set to do a ham for Easter.

A quick update on how the ham is looking.  It's been on since early this afternoon. I did a couple hours of cold smoke (Hickory) then turned it on to hot smoke (smoke mode on the MAK).  So it's been on for a total of about eight hours so far.  It's currently at 108° and will stay in smoke mode until it's reaches around 155° - 160°. So it has a ways to go yet.

This will probably go for a good part of the night, so I'll probably post the final pics tomorrow as soon as I get a chance.

How are you gonna glaze it Cliff?

I may not actually glazed this one. I haven't decided yet, but if I do it will probably either a Maple glaze, or maybe just a brown sugar glaze.

Here's what it looks like this morning, at about 147° I.T.

I decided to brush on some honey for a glaze.  The white dots in the photo are snow flakes.

LOL, It really is a funny story...

This happened down at the 2013 Fall Gathering in Georgia.  I had cured a picnic ham and put it on Tim's MAK to smoke overnight.  I set my alarm to get up early in the morning to check it, but Pam got up even earlier than I did to make some Scotch eggs, and needed the MAK.

Well, I didn't know this and you can imagine the look on my face when I opened the MAK to check on the ham, and... IT WAS GONE!!!  :o

I started looking around and saw NO sign of the ham nor anyone else!  A few minutes later Mike (HighOnSmoke) came in.  He had no idea what happened to the ham either, but helped me look... to no avail.   We looked everywhere we could think of, but that ham was nowhere to be found!

Well, after about 15 minutes of searching, and still no sign of the ham,  Pam walks into the kitchen area and says, "Oh it's over here in the microwave," where she'd moved it to keep it hot, so she could get the Scotch Eggs going!   :D

Of course all was forgiven and I have to tell you, we ate very well that morning: Scotch eggs, Latkes, sausage gravy, a fresh smoked Ham...  What a great memory that is for me!

Love ya Pammy!  :)

When we got home from church, I couldn't wait to slice into the Ham to see how it'd turned out. By then it was cooled down, but still warm and perfect for slicing.

The reveal...

Thanks!

That looks absolutely wonderful!   I was afraid your story was gonna end with a dog getting to the ham after you said the backyard smelled so good.    Guess your yard is fenced well enough to keep out the dogs, and this thing was bigger than most cats.  They couldn't have hauled it off.   Did like the true story, however.
